Green beans can be so ordinary. Easy. Can easily accompany any dish. But here they get another stage. Here they are taken very seriously. Together with the barley, the pecans and the tahini they suddenly play in another league. It is a combination of flavours and bites that is absolutely very tasty. And really something else.

Ingredients

  • 500 gram green beans

  • 75 gram barley (or quinoa)

  • 70 gram pecan nuts

  • 1 tea spoon chili flakes

  • salt and pepper

  • Sauce
  • 3 table spoons tahina/sesame paste

  • 3 table spoons olive oil

  • 3 table spoons lemon juice

  • 1 table spoon dry mint leaves

  • 2 cloves garlic

  • 1 table spoon vegan honey

preparation

  • Cook the green beans for a maximum of 5 minutes. Not too long, they should still be nice and crispy. Meanwhile, cook the barley according to the directions on the package.
    Roast the pecans briefly in a dry frying pan so that they give off their taste and aroma.
  • In a bowl, mix the tahina, olive oil, lemon juice, dried mint, finely chopped garlic and vegan honey.
  • Bring everything together in a large bowl, make sure to mix everything well.
